Salmon with Horseradish "Cream"
Serves 2 Protein/Carbohydrate/Fat Ratio: 42-12-46
Ingredients:
1/2 cup plain lowfat yogurt or low-fat sour cream 4 tsp drained, prepared horseradish 2 tbsp chives, chopped 6 oz salmon fillet, cut in half whole fresh chives
Recipe Directions:
1. Preheat oven to 350ºF. Lightly oil nine-inch glass pie plate. 2. Combine yogurt, horseradish and chives in small bowl. Season with salt and pepper. 3. Place salmon in prepared dish. Season lightly with salt and pepper. Spread 1 tablespoon yogurt mixture over each piece. 4. Bake until flaky and cooked through, about 15 minutes.
